1/2 cup vegetable oil
1 1/2 cup sugar
2 tsp. vanilla
2 cups flour
1/2 cup cocoa
1 1/2 tsp. baking soda
1 tsp. salt
2 cups shredded zucchini
1/2 cup chopped walnuts
2 eggs
Directions
1. Preheat oven to 350°.
2. Mix oil, sugar, and vanilla until well blended.
3. Combine flour, cocoa, baking soda, and salt; stir into sugar mixture.
4. Fold in zucchini and walnuts.
5. Spread evenly into a greased 9×13 pan.
6. Bake for 20-30 minutes until brownies spring back when gently touched.
6 Tbsp. cocoa
1/4 cups butter
2 cups confectioner sugar
1/4 cups milk
1/2 tsp. vanilla
1. Melt cocoa and butter together; set aside to cool.
2. Blend confectioner sugar, milk, and vanilla together.
3. Stir in cocoa mixture.
4. Spread over cooled brownies before cutting into squares.
