2 cups eggplant, peeled, cubed, and cooked soft
1 small onion, chopped
2 eggs, beaten
2 slices bread, torn in pieces
2 T. flour
1 tsp. salt
2 T. butter
1 T. ketchup
1 cup milk
1/4 tsp. pepper
1 cup shredded cheddar cheese
1. Mix thoroughly all ingredients except cheese.
2. Pour into greased casserole.
3. Bake at 350* for 20 minutes.
4. Top with cheese; bake 10 more minutes.
Yields 6-8 servings
